BOURSIN CHICKEN IN PHYLLO
"Casey of Decatur Country Club wraps herbs and chicken in a crispy crust of phyllo - great for dinners or formal luncheons."
8 boneless skinless chicken breasts (4 ounces each)
8 ounces boursin cheese, softened
1 clove of garlic, crushed
1 teaspoon caraway seeds
1 teaspoon dried basil
1 teaspoon dried chives
1 teaspoon dried dillweed
3 sheets phyllo dough
Melted butter
Rinse the chicken and pat dry; set aside.
Mix the cheese, garlic, caraway seeds, basil, chives and dillweed in a bowl. Spread 1 tablespoon of the mixture over the center of each chicken breast and roll up; set aside.
Brush the phyllo with some of the butter. Cut into 8 squares and wrap each chicken breast with the dough. Brush each roll with butter. Place in a shallow baking pan.
Bake at 350 degrees F for 20 minutes or until the chicken is cooked through.
Makes 8 Servings
