Hi Don, l looked into this a while ago trying to figure out if I could substitute regular rice for converted rice. According to Cook's Illustrated, converted rice is soaked, steamed and dried in the husk before it is milled - the result is firmer, more separate rice that does take slightly longer to cook

Uncle Ben's makes a converted rice, so you should be able to find it - it's not always the largest printing on the label!
