Balsamic vinegar- substitution

Wow! $15 - it must be one of the more 'aged' balsamic vinegars!

I get (at the supermarket) about 12 - 16 ounces for $2 to 3 or thereabouts. It keeps forever - (well,like most vinegars - a long time).

I don't know the recipe but I would 'guess' she could use a good quality red wine vinegar - or a white wine vinegar. Or, depending on what someof the other ingredients are in the chicken dish - a good raspberry vineagar, etc.etc.

The balsamic vinegar has a more soft (?) but definitely great taste and the better ones can almost be used in dressings without oil etc. IN fact, they are great with some fruits. It gives a great flavor to lots of dishes ... I use it in the majority of my salad dressings, and in many main courses - it is great for deglazing pans and giving added depth and flavor to many dishes.

I'd try it with red wine vinegar - or other good quality vinegar ... and shop around for a better price ... and then try it ... as it is great!
