Potatoes work fine in a crock pot! It's a good way to fix them in summer when you don't want to heat up the whole kitchen with a hot oven going for an hour. Texture is a little different but we like them. And for the two of us the 1 quart pot is the perfect way to do them. Just prick with a fork, wrap in foil, and bake in the crock pot, covered on low about 8 hours. Don't add any water to the pot.

The recipe book that came with the Rival 1 quart is pretty sparse, but there's enough variety that you can use it as a guide to adapt your own recipes. There's a chicken in a pot recipe (uses 2 or 3 chicken pieces), pot roast of beef and of pork, each using 1 pound of meat, Swiss steak using half pound of round steak, chili and bean soup both using 2/3 cup dry beans, stuffed peppers using 2 peppers, poached pears using 2 or 3 pears, spagetti sauce using 1/2 pound ground beef, applesauce using 3 apples, and so forth. So you can figure out from those how to adapt just about any small recipe you might want to do. I make one serving of oatmeal overnight in the 1 quart when hubby's on the road. It's comforting to wake up smelling breakfast when I'm by myself.
