Recipe: Apple Corn Johnny Cake (using cornmeal and rice flour, no gluten or dairy)

"A breakfast idea without gluten or dairy. Serve warm with maple syrup or as a quick bread with soup or salad."
1 cup cornmeal
3/4 cup rice flour
2 tbsp sugar
4 tsp baking powder
1/2 tsp salt
2 eggs, separated
1 3/4 cups applesauce (14 oz can)
2 tbsp canola oil
6 strips bacon, cooked and crumbled
In a large mixing bowl combine cornmeal, rice flour, sugar, baking powder and salt; set aside.
Beat egg whites until stiff; set aside.
To the dry ingredients, add egg yolks, applesauce, oil and bacon; stir well.
Fold in egg whites. Pour batter into greased 8x8-inch baking pan (or prepared muffin pan cups).
Bake in 425 degrees F oven for 35-45 minutes (shorter baking time for muffins) or until an inserted knife comes out clean.
Makes 4-5 servings
