Recipe: A1 Jalapeno Summer Sausage

A1 JALAPENO SUMMER SAUSAGE

5 lb ground beef
6 jalapeno peppers, seeded and chopped
2 tbsp curing salt (kosher salt)
1 tbsp black peppercorns, cracked once
1 tbsp liquid smoke
1/4 tsp garlic salt
1/4 tsp mustard seed
1/4 tsp onion salt

Mix all ingredients together well.

Form into 2 rolls and wrap tightly in foil.

Refrigerate 24 hours.

Set on a rack in a baking pan. Put water in bottom of pan.

Bake in a 350 degrees F oven for 1 1/2 hours.

Remove from foil after baking.

Good served hot or cold.
