Dear Nick,
The original bougatsa is baked plain without cream or cheese. When it is ready they sprinkle the top with sugar and cinnamon. The taste is excuisite because you must use first quality butter and it really melts in your mouth.
In Thessalonica, people call bougatsa the one with the cream inside. The one with cheese is like a cheese pie.
I will post the recipe in the weekend because I have to translate it from greek and it will take some time. OK?
