Recipe: Log Cabin Cheddar Sticks (appetizer, make ahead)

1/4 cup butter, softened
1 cup grated cheddar cheese
1/4 cup milk
1/4 teaspoon salt
dash Tabasco
dash paprika
dash cayenne
3/4 cup sifted flour
1 1/2 cups fine soft bread crumbs
Soften butter to a creamy state and blend in cheese, milk, salt, Tabasco, paprika, and cayenne. Combine flour and bread crumbs and add to mixture. Divide mixture in half and refrigerate overnight.
WHEN READY TO BAKE:
Preheat oven to 350 degrees F.
After it's chilled, roll out half of the dough at a time between 2 pieces of waxed paper until very thin. Work quickly. Take a knife or pastry wheel and cut into strips about 5 inches long and 1 inch wide. Place strips on cookie sheet and top with coarse salt or grated Parmesan cheese.
Bake at 350 degrees F for about 15 minutes or until golden brown.
Makes about 40 sticks
