Casa D'Angelo's Insalata Casaburo

Tried to do some investigative research for your salad request across the web. Since you said it had been published I gave it a go....even thought you could e-mail the restaurant at casa4pasta@myvine.com and ask them direct; then, I came across this in an interview about the restaurant with the owner:

"As for the famous Insalata Casaburo ($3.25 for a small serving, $4.25 for a large), the price has increased slightly since I first tasted it in 1986 or so, but the appeal is the same: romaine and iceberg lettuce, cheeses, sweet peppers and green onions served with the house dressing. It is unimaginable how many of these have been served over the last 25 years. And while you may think you know what's in the magical dressing, rest assured you don't.

I thought I did and told Casaburo so.

"No you don't," he said, a slight smile on his lips and, I'm sure, his hand moving almost imperceptibly under his jacket. "We've taken steps to make sure the recipe doesn't get out. Only our top managers know what's in it."

And they'll never tell, believe me."

So, John, maybe this is just wishful thinking on the owner's part and you'll still get lucky. Hopefully, there's a clone or one of those published recipes you spoke of out there. Good Luck! I tried.
