CONFUSED!

Can anyone tell me the difference between marzipan, fondant, gum paste, and sugar paste. Also, how does one determine what to use each for. In particular i am using it for making balls and designs with gingerbread. Also, does anyone know how long gingerbread can be stored, and/or if it can be preserved, and if so, how?
