CREAM CHEESE BONBONS
1 (3-ounce) package cream cheese, softened
2 1/2 cups powdered sugar, sifted
1/4 teaspoon vanilla extract
Dash salt
Few drops food coloring
1/2 to 1 cup sweetened flaked coconut, for rolling*
In a medium bowl, beat cream cheese by hand or with an electric mixer until smooth. Gradually add powdered sugar, blending thoroughly. Add vanilla, salt and food coloring as desired. Cover and refrigerate 1 hour.
Line a large baking sheet with waxed paper.
Shape mixture into balls 3/4 inch in diameter. Roll balls in coconut, flattening tops of balls slightly if desired. Place on baking sheet.
Cover and refrigerate 1 hour or until firm.
Store in an airtight container in refrigerator.
*Note: If preferred, the coconut used for rolling can also be tinted. To tint, place coconut in a small plastic bag and sprinkle lightly with water. Add a few drops of food coloring to bag. Seal bag and shake well.
