crockette cornish hen
Misc. Whereas this isn't a recipe as such, I ran an experiment last night.
1 frozen cornish game hen fits nicely inside the 1 qrt crockette.
the frozen 'knees' poke the lid for a while but after it's thawed a bit they settle down.
after 2 hours you can tug out the gizzard bag but there's no crime in letting it stay in.
I let it cook until it was falling off the bone, about 7-8 hours which was far too long for me. but i guess is the way most people prefer their birds. I never found much use for the little cornish hen too much work for it size however it make a nice treat.
This would have been nice with some orange marmalade glaze added about half way thru. NOTE I would crack the cover as a frozen bird makes about 3/4 cup of liquid. I took out mine and added a packet of gravy mix to the liquid. Very tasty.
