The kind of dulce de leche that you mention here is quite easy & is best in the Argentinian cake MILHOJAS. It is also used in the Crepes that the Mexican people use for dessert. Our Dulce de Leche & the one from Santo Domingo is different. By the way I love it. If you want the recipe just let me know (it is like a curd, using sugar, lemon juice to cut the milk, some small lemon peels, canala en rajas & I dont remember now what else). Just let me know if you want it.
