Recipe: Southern Fried Cookies (1969)

SOUTHERN FRIED COOKIES

1/4 cup butter, room temperature
1/2 cup sugar
3 eggs
2 1/2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup cold strong coffee
3/4 cups chopped pecans
Vegetable oil (for deep frying)
Confectioner's Sugar (for dusting)

Cream butter with sugar; add eggs and beat well.

Combine flour, baking powder and salt. Add to the first mixture, alternately with coffee. Fold in pecans. Place dough on lightly floured board and shape into a thick log. Refrigerate until well chilled.

WHEN READY TO COOK:
Fill a deep heavy pot with oil to within 3 inches of the rim. Heat to 375 degrees F on a deep fat thermometer (a small soft cube of white bread should brown in 30 seconds ).

Slice chilled dough into thin rounds and fry a few at a time in the hot oil. Drain briefly on paper toweling and dust with confectioner's sugar.

Makes about 3 dozen cookies
