Hi,

There are many names for "cream". There are single cream, double cream and the alike. It is named because of it's percentage of milk fat content. Double cream usually has very high milk fat (roughly 45% and above). And single cream is usualy used in savory dishes such as pasta. (It can't be whipped.) You can use "thickened cream" in the recipe I posted.(normally 35% milk fat) Unfortunately, though truflles are very yummy, they do contain quite a bit of fat. I hope this helps.
