BASIL SHRIMP SAUTE
(Shrimp is marinated for an hour, then broiled on skewers.)
2 cloves garlic, finely chopped
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 cup chopped fresh basil
1/4 cup dry-pack sun-dried tomatoes, chopped
1/4 teaspoon salt
1 pound large shrimp, peeled and deveined
Combine garlic, oil, lemon juice, basil, sun-dried tomatoes, salt, and shrimp in a plastic food-storage bag. Gently press with hands to coat shrimp. Refrigerate 1 hour, turning occasionally.
WHEN READY TO COOK:
Heat broiler. Soak 4 long wooden skewers in water 5 minutes.
Thread shrimp onto each skewer. Place skewers on broiler-pan rack.
Broil skewers 3 inches from heat until shrimp are cooked through, about 8 minutes, turning once.
Makes 4 servings
