Gladys: I was in New Orleans for the birth of my second grandchild on Sept. 19th. One week after his birth, the first Hurricaine hit!! We had considerable amounts of water in the streets...almost up to my daughter's doorway!! Then one week later (on his two week birthday....) the other one hit!! That one was less water, but more wind......we made out just fine. When you live near the Gulf Of Mexico you get so used to that way of life. As soon as they said the storm was headed our way....I sarted cooking!!LOL You'll love that roasted chicken and the soup was so perfect last night with the cold winds blowing here in the mountains!!

Tonight I am preparing a casserole with leftovers....Some Penne pasta, some meatballs and Italian sausage with a bit of tomato gravy, some cubes of eggplant that I fried in some olive oil and minced garlic, and a few tablespoons of Ricotta cheese. This will all be mixed together and topped with a bit of Parmesan and Mozzarella cheeses and heated in the oven!!

Another warming meal for a very cold evening!!
