Glazed Sweet Potatoes (using orange Jello)

This is the only recipe I could find from Jello that used sweet potatoes. The recipe is from a booklet titled Joys of Jell-O, no year, just 3rd edition, 1st printing. Here goes:

GLAZED SWEET POTATOES

1 package (3oz) Jell-o Orange Gelatin
1/4 cup firmly packed light brown sugar
Dash of salt
1 cup boiling water
1 tablespoon butter
1 (1 lb.) can sweet potatoes, sliced or quartered (or can use 6 to 8 cooked sweet potatoes)

Dissolve Jell-O Gelatin, sugar, and salt in 1 cup boiling water in skillet. Add butter and bring to boil, stirring constantly. Add sweet potatoes, cook over medium heat, about 15 minutes, basting frequently. When syrup thickens and is glossy, remove from heat.

Serve hot.

Makes 3 to 4 servings.
