BARBECUED BEEF SHORT RIBS
Place in roaster oven and brown well:
2 or so pounds beef-short ribs, cut in serving size pieces
1/4 cup shortening
1 garlic clove
Combine and pour over ribs:
1 cup water
salt and pepper* (to taste)
pinch dried red pepper flakes*
1/4 tsp chili powder
1/4 tsp Tabasco sauce*
1 Tbsp vinegar
1/2 cup catsup
1 Tbsp sugar
1 medium onion, minced
2 stalks celery, chopped
Cover and bake 350 degrees F for 2 to 3 hours. Add additional water when baking to cover ribs.
Add during the last 1/2 hour:
Potatoes and carrots, cut up
Or, short ribs may be pressure cooked 15 pounds pressure for 45-50 minutes.
*We like this with more spice - a bit more Tabasco sauce, pepper and dried crushed red peppers. - Suzanne
