Hog's head cheese

Cathy: I have the Prudhomme Family Cookbook, which has a recipe for Hog's Head Cheese in it. It takes up 3 1/2 typed pages. Before I try to type it in, I need to ask if you are looking for a recipe that actually calls for a hog's head. The book mentions that there are other ways to make the cheese, but Paul prefers the oldfashioned way--with a fresh (never frozen) 12 to 14 pound hog's head. I found it amusing that this recipe is right after the recipe for stuffed pork stomach.
