how do you caramilize onions

Can anyone help me with "how to" caramilze onions.
I had them in a restaurant as a cold entre. There were served with szechuan diced duck cold and a spinach salad and roasted nuts. The dish was delicious but the caramiled onions were stupendous.
Can anyone put me in the right direction.
