Recipe: Caramelized Onions (crock pot)

Crockpot Caramelized Onions
These are delicious!
Make these while onions are in season and freeze for later.

6 Vidalia* onions-approx. 2 1/2 pounds, about 3 to 4 inches in diameter, stem and root ends sliced off, peeled and left whole

1 stick butter

Place the onions and butter in a Crock Pot slow cooker and cook on low 24 to 36 hours until the onions are deep golden brown and very soft. Different crock pots will take different amounts of time--it is almost impossible to overcook this. *While this recipe calls for Vidalia onions, you can easily substitute spanish or even garden variety yellow onions. If you have a large crock pot you can double, or even triple the number of onions. It is not necessary to increase the amount of butter.
