EDDIE V'S BANANAS FOSTER CAKE
FOR THE BANANAS FOSTER:
1/4 cup butter
1 cup brown sugar
1/2 teaspoon ground cinnamon
1/4 banana liqueur
4 bananas cut in 1/4 slices
1/4 cup dark rum
4 scoops ice cream (for serving)
FOR THE BUTTER CAKE:
1 French style bread loaf (day old)
2 tablespoons butter
4 eggs, beaten
2 cups milk
3/4 cup white granulated sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
TO MAKE THE BANANAS FOSTER:
Combine the 1/4 cup butter, brown sugar and 1/2 teaspoon cinnamon in a saucepan. Cook on low heat until the sugar dissolves.
Stir in banana liqueur and add bananas. Cook bananas until soft and brown in color.
TO MAKE THE BUTTER CAKE:
Preheat oven to 350 degrees F.
Cut bread into 1/2-inch pieces; set aside.
In a large mixing bowl, combine eggs, milk, granulated sugar, 1 teaspoon cinnamon and vanilla. Beat until well mixed. Add bread; mix well. Add to buttered cake pans.
Bake 30-40 minutes or until the top springs back when lightly tapped.
Add rum to the Bananas Foster; spoon over rounds of the Butter Cake and flambe. Place a scoop of ice cream next to each serving.
Makes 4 portions
