Debbie thanks for this great recipe. It is similar to one i make only i cook the rice seperate and then make the chicken in white wine sauce. However, i think that your's sounds much better, i never thought of cooking the rice in the sauce, i bet it tastes great! Also it used fresh stock and your suggestion for getting extra fat out is ingenious. Further more, it's low fat so it won't spoil my diet. :)
One thing i tried which adds a great flavour to this dish if you do cook rice seperate is to use leftover chicken kebabs from the bbq. I marinated chicken then sqewered with toms, bell peppers and mushrooms then bbq'ed them and left them to cool. The smoky flavour goes really well with the white wine sauce. It's a great way to use up extra bits from the bbq.

Going to try your recipe next week for after work supper.
