Your post brought back some memories of when I was growing up. I've never like meatloaf, and esp. not leftover. But my dad made it alot, and it was up to me to serve it again. So I always did just what you suggested - used it in spaghetti sauce. But of course none of those pieces of meatloaf managed to find their way to my plate... :-) At the time, spaghetti was also my favorite meal, and the easiest for me to cook. We had spaghetti for dinner about 3 times a week in those days!
