I forgot the stuffing and potato questions. The stuffing freezes very well. I have 3 casseroles that have stuffing and they are standard fare in our freezer. Potatoes--well, it really depends on what you are freezing them in. In liquidy stuff like stews, they tend to mush out a little bit, in casseroles and things like quiche, they get a bit watery. I do use them in pot pies, stews and breakfast burritos. But they do get a little mushy/watery.
