Recipe(tried): Lemon Basil Baked Chicken for Chris

Dear Chris,

The Lemon Basil Chicken was a last minute "put together" with what was found in the fridge and the pantry. It was delicious!

Lemon Basil Chciken

1 lb. skinless, boneless, chicken breasts, butterflied
1 c. chopped onions
1/2 c. red bell pepper, chopped
1/4 c. fresh lemon juice
1 T. basil flakes
1/4 t. black pepper
1/4 t. salt
1 t. fresh minced garlic
1/4 c. olive oil
2 T. butter

Season chicken breasts with seasonings. Arrange on baking dish with veggies and sprinkle olive oil over and then lemon juice over. Bake at 350 for 30 minutes until meat is golden brown.
