NEED A CHEESECAKE DOCTOR--HELP ME

I NEED HELP!!!! I HAVE RECENTLY STARTED MAKING CHEESECAKES. BUT I AM HAVING A HARD TIME WITH GETTING THE COOK TIME CORRECT. THE RECIPE ON THE BACK OF THE PHILADELPHIA CREAM CHEESE BOX SAYS 50-60 MINUTES. I HAVE COOKED IT AS LONG AS 70-75 MINUTES AND THE VERY CENTER IS TOTALLY DONE. ALSO THE BOTTOM CRUST HAS A SOGGY APPEARANCE. WOULD REALLY APPRECIATE SOME INPUT ON THIS. ALSO HOW DO YOU KEEP IT FROM CRACKING?????? THANKS ALOT FOR ANY HELP
