I live in the Charleston area and know what you are talking about...I think it's just scored in a diamond pattern and then deep fried. However, I have no idea for how long, but I'm sure it's only a few minutes. My son is a fisherman and I'll check with him if he knows more...I'll let you know. Try the food at Carolina's next time you're in town, I had a almond crusted grouper fillet there that was 'to die for'.
