Pat, one way that we really like it is take the roast and coat the outside with Seasoned Salt and Pepper. Really lay it on. Preheat the oven to 500 degrees. Put the roast in a shallow baking dish and rack and cook 6 minutes per pound. Then turn the oven off leave it in there for 1 hour. The key is not to open the oven door! The outside is nice and crispy and the inside is nice and medium rare!
