Recipe: Chestnut Soup

CHESTNUT SOUP

1 tbsp. butter
1 tbsp. flour
2 cups chestnut puree
6 cups chicken stock
2 cups milk
1/4 cup finely chopped celery
1 tbsp. finely chopped onion
salt and pepper to taste
1 egg beaten
3 tbsp sherry or wine

Melt butter in a large pan. Add flour and stir until smooth.

Add chestnut puree, chicken stock, milk, celery, onion, salt and pepper to taste. Cook for 20 minutes.

Just before serving stir in egg beaten in the sherry or wine.
