Recipe(tried): Uses for eye of round roast

Pat -- about a month ago (say 7/19 or thereabouts) - in reply to a 'it's hot in TX' on this board, I printed a recipe for Beef Round Fajitas (it is in 2 segments - one right after the other - as I inadvertently hit the send button!). It is either Beef Round Fajitas or Roast Beef Fajitas - but I'm sure if you are interested, you can get it doing a search at the top of this board.

It is good -- and nice for hot weather as it is made in the microwave I also explained how we do something similar to make 'Chicago style beef sandwiches'. An eye of round works quite well in the microwave -- and is a godsend in the summer time. using the rub on it -- makes it have a 'nice color'. And it is tender.
