Poulty preservation - 1800's

Misc.
I am writing a book and recall an English cooking tradition from the 1800's
which entailed hanging chickens (gutted? not gutted?) in a warm place to age
them before cooking. Curious to know how long, why, etc.? Not going to do it,
only need information for book. Grateful for your information. Thanks, JLB
