Recipe(tried): South African Bobotie

500g Mince
1 1/2 cups Milk
2 slices White Bread
4 Eggs
100g Butter/Margerine
1 small Onion
2 tblsp mild Curry Powder
3 Bay leaves
1 tsp Baking Powder
1 tsp Salt
1 tsp Ground Black pepper
Method:
Mix the curry powder, the salt and pepper with half a cup of the milk and set aside.
Melt the butter in microwave and set aside.
Meanwhile soak the bread in milk until soggy.
Finely chop the onion, add half the butter and fry in pan at moderate temperature until soft, gradually adding the curry mixture, bit by bit.
When soft, add the mince (room temperature & loose), stirring regularly.
Squeeze out the milk from the soggy bread, add ONE of the eggs, mix with fork and add to the mince by stirring it in.
Place the mixture in well buttered square ovenproof dish.
Beat the remaining THREE eggs, the milk (NB: topped up if required, to make one cupful), the balance of the butter, and the baking powder together.
Pour over the meat dish.
Gently place the three bay leaves on the surface of the completed preparation.
Place the square container in a flat pan with 200 ml water in it, and bake in oven at 180 until the top becomes medium brown.
Serve with YELLOW rice, laced if preferred.
(When making yellow laced rice, use one cup of rice to three cups of water. Add one teaspoon of tumeric, one tblsp of sugar, one handful of pip-less dark raisins and a tsp of salt. For best result, start on high temp and finish gently by leaving the lid on while it settles at low temp).
