Quince Jelly

After reading answers on this site. I found a web site about quince. After some correspondence, I found out the fruit was edible. I consulted my old, trusty copy of Joy of cooking and used the following recipe.

Wash and chop up the fruit,using peels, pulp, and seeds, add water and simmer. Let drip for until all juice is extracted. To 1 cup juice, add 3/4 cups sugar and boil until it slides from the spoon in sheets or when placed on ice cold plate, it jells. I was surprised it jelled with no surejell added. It also has a very good taste.
