you can eat the quince. prepare the fruit as you would for jelly.( i am not sure how you do this as i got the quince already juiced) I know that you use a jelly bag and let the juice from the fruit drip through. once you have that liquid you can find a recipe on any instructions in a box of certo. follow the one for crabapple. i did this last year and the jelly is unbelievably good.
