Todd,
I'm assuming you want to do this from scratch? Why not just use canned (alot easier) and add a little brown sugar, ketchup, etc, as needed. Maybe even lay some pre-cooked bacon on top, (make an attractive appearance). Some of the named (Bushs', etc.) canned beans are delicious, and more so if you have to prepare it for 100 people.
