re: baking an angel food cake in a silicone pan

Hi Patsy,

I'm going to be interested to hear what anyone has to say about this. I don't think you'll get quite as much rise as you will with a metal pan and the texture of the cake may be different, especially around the edges. You'll need to cool the cake in the pan upright on a rack (if you turn it upside down to cool it will fall out of the pan). I would also set the pan on a cookie sheet to bake so you can pick that up instead of the silicone pan which tends to bend and can be hard to handle when full and after baking.

I think this may come down to a matter of taste. I'm sure I don't have to tell you, but for anyone else that wants to experiment, it would be best to use a add-water-only box mix so you don't waste all those egg whites. At the very least the cake should be still good for trifle (if the odor problem doesn't happen).
