Recipe: Mushroom Quiche

MUSHROOM QUICHE

1 single pastry crust
1 tsp Dijon mustard
1 1/2 cups mushrooms, sliced
1 cup shredded gruyere cheese
3 eggs, beaten
2 cups half and half
salt and pepper
1/4 tsp ground nutmeg
1 tsp paprika

Preheat oven 375 degrees F.

Place pastry in quiche pan or shallow casserole dish. Make holes in bottom of pastry with fork. Trim sides of pastry to fit pan.

Using pastry rush, spread Dijon onto crust bottom and sides. Add Gruyere then mushrooms.

To eggs, whisk in half and half, paprika and nutmeg. Pour into shell.

Bake 1 hour.
