Recipe: Homemade Turkey Sausage with Home-Style Potatoes (microwave and broiler)

"The meat 'n' potatoes lovers in your household will go for this low fat version of sausage and home-fries. If you have any leftover sausage, refrigerate or freeze it, then reheat it in the microwave when needed. Thawed patties should take about 1 minute."
FOR THE POTATOES:
1 medium onion, chopped
2 teaspoons soy sauce
2 potatoes, diced
FOR THE SAUSAGE:
1 cup ground turkey
1 egg white
1/3 cup fresh whole-grain breadcrumbs
1/2 teaspoon dried sage
1/2 teaspoon ground coriander
1/4 teaspoon fennel seeds
1/4 teaspoon paprika
1/4 teaspoon black pepper, freshly ground
1/8 teaspoon dried marjoram
1/8 teaspoon dried thyme
1/8 teaspoon summer savory
1 pinch grated nutmeg
1 pinch ground red pepper
TO PREPARE THE POTATOES:
In a 6-cup glass measure, combine the onions and soy sauce. Microwave on High for 3 minutes.
Add the potatoes and toss to combine. Cover with wax paper and microwave on High for 4 minutes. Stir, cover again, and microwave on High for 4 minutes. Let stand, covered, until ready to serve.
TO PREPARE THE SAUSAGE:
Preheat broiler.
In a medium bowl, combine the turkey, egg white, breadcrumbs, sage, coriander, fennel, paprika, black pepper, marjoram, thyme, savory, nutmeg, and red pepper. Mix well. Form into four patties.
Place the patties on a baking sheet and broil about 4 inches from the heat for about 4 minutes, or until lightly browned on top. Flip and broil several more minutes to brown and fully cook.
Serve hot with the potatoes.
