re: beignet woes

I lived in N.O. for ten years,until katrina blew me to Florida. Your description of your "problem" sounded like Cafe Dumonde perfection to me ! I havent attempted to make from scratch before, but missing them so, and armed with your recipe, I will enjoy these sadly missed delights again very soon!
