ISO: Beignets
Misc.I have been trying to make beignets and each time I've made them, I've been disappointed. The outside looks great and they puff up and smell great but when I bite into them there is nothing but air on the inside. I follow the recipes to the letter but each time I get the same result. I use the Beignet recipe from Ralph Brennan's Jazz Kitchen. Is there a tip or trick I should know about to keep them from being air puff? Thank you.
