Re. Clay Pot Cooking.

I don't have a clay pot either, so I use either a cast iron (Le Cruset) casserole or a glazed heavyweight china casserole dish (mine is made by Denby). My mother swore by her Le Cruset casserole (not a plug) which I inherited from her, it is over 20 years old and was used at least once a day in her restaurant, and still cooks beatifully. Hope this helps.
