Misc.The green chiles canned by El Paso are not roasted- I'm not sure what they put on them to get the skin off. Instead of canning, green chiles are much better roasted (they are much more tender) and frozen. If you still want to can them, you might try boiling them for a few minutes and them peeling the skin off like you would with a tomato. Them dice them and can them in a pressure canner ( necessary to aviod botulim growth). Good luck- I hope this works for you!
