re: Key Lime Juice - Hi Dave!

My experience of them is that they are very juicy. I just squeeze them over a sieve (to catch the seeds). With a measuring cup for the juice underneath, of course!

Whatever the measure of juice is in the recipe, that is what you use straight, no dilution.

Just grab a bagful off the grocery shelf and have at 'er. Whatever you get, you get...if you have more than you need int he recipe, it keeps well in the fridge. Once you get started, you might as well do the whole bag...not much point in trying to squeeze them a few at a time. It is much more convenient to just reach in the fridge and have some juice for other recipes all ready to rock 'n roll.
