Recipe: Marinated Chicken Caribbean Style

MARINATED CHICKEN CARIBBEAN STYLE

4 sheets (12x18-inches each) Reynolds Wrap Everyday Heavy Duty Aluminum Foil
2 cups shredded carrots
4 (1 to 1 1/4 lb. each) skinless, boneless chicken breast halves
2 cloves garlic, finely chopped
1/2 medium jalapeno pepper, seeded and finely chopped
1/3 cup lime juice
1/3 cup maple-flavored syrup
1 1/2 tablespoons grated fresh ginger
1 tablespoon chopped fresh cilantro
1/4 teaspoon black pepper

Preheat oven to 450 degrees F or preheat grill to medium-high.

Center one-fourth of carrots on each sheet of Reynolds Wrap Everyday Heavy Duty Aluminum Foil. Top with chicken breasts.

Combine garlic, jalapeno pepper, lime juice, maple-flavored syrup, ginger, cilantro and black pepper; spoon marinade over chicken.

Bring up foil sides. Double fold top and ends to seal packet, leaving room for heat circulation inside. Repeat to make four packets.

Refrigerate packets to marinate for 1 hour.

WHEN READY TO COOK:
Bake 15 to 18 minutes, or until done, on a cookie sheet in oven or grill 10 to 12 minutes in covered grill.
