Re: low fat/no fat recipes

I belong to a fatfree mailing list and have gotten literally DOZENS of lowfat recipes that really taste good. Of course, 'good' is different for everyone, and I've tried things others raved about and I thought were just awful. They have a web site at

http://www.fatfree.com

that has a searchable archive and there is also a lowfat list if you don't want to be that severe (i.e., there are NO recipes for meat of any kind on this site). These people are talking close to zero fat, but my kids will tell you that it can be just great (not always, since it's tough to get them to eat many vegetables, but can be).

My ratatouille recipe was fatfree before I got on this list and it's easy, too -


1 onion, chopped
3 cloves garlic, chopped
1 eggplant, medium dice
2 zucchini, large dice
1 large can stewed tomatoes, juices reserved
tomato paste (optional)
1T oregano
1T basil
salt and pepper to taste

Saute onion over medium heat with a little bit of water until translucent. Add garlic and stir fry for a few seconds. Add the eggplant with the tomato juices and simmer, covered, 15 minutes or so. Add zucchini and simmer another 15 minutes. Add tomatoes, oregano and basil and taste for tomato balance. Add tomato paste, salt and pepper as needed. Simmer until veggies are tender.

I have thrown this whole thing in the microwave when in a crunch for time and set it on HIGH for 25 minutes. You must use a VERY large casserole to avoid boil-over with the juices, and you can toss in some orzo to help reduce the liquid, as well.

I bring this dish to our church potlucks every month and everyone loves it. Good luck with your recipes!
