Recipe: Quick Tofu Feta

3/4 cup crumbled firm tofu
1 teaspoon agar powder (a gelatin-like thickener available at natural food stores)
2 tablespoons water
1/2 teaspoon sugar
1 tablespoon oil
1 1/4 teaspoons salt
1/2 tablespoon light miso
3 tablespoons lemon juice
Puree tofu, agar, water, sugar, oil and salt in a food processor or blender until very smooth.
Transfer the mixture to a medium saucepan and cook over a medium flame until it bubbles and thickens, 3 to 5 minutes.
Whisk the miso and lemon juice into the mixture, then pour it into a baking dish. Cover and chill until firm, about 2 hours.
Cut into squares or crumble to serve.
Makes about 1 1/2 cups
