BROCCOLI AND CAULIFLOWER RING
1 small tomato, cut into 6 wedges and seeded
4 cups fresh broccoli flowerets
4 cups fresh cauliflower florets
1/4 cup water
1/4 cup butter or margarine
1 tablespoon fresh lemon juice
1/4 teaspoon salt
1/8 teaspoon pepper
Arrange tomato wedges skin side down on bottom of 9 cup Microwave Bundt Pan. Set aside.
Place broccoli flowerets and caulifowerets in 3 quart casserole. Sprinkle water over vegetables; cover. Microwave at high 9 to 13 minutes, or until vegetables are tender crisp; stirring after half the time. Drain.
Arrange vegetables over tomatoes in Bundt, pressing to pack firmly. Set aside.
Place butter in 1 cup measure. Microwave at high 45 to 60 seconds, or until melted.
Blend in lemon juice, salt and pepper. Pour lemon butter over vegetables. Place pan on Micro Go Round in oven. Microwave molded vegetables at high 3 minutes.
Invert onto serving plate.
