re: Marshall Field's salad dressing from 80s

In the 1980s, Marshall Field's salad dressings were supplied by Conway, a company still in existence (or so says an article from the Chicago Tribune). Conway also supplied Don Roth's, Berghoff's, and the Waldorf-Astoria. You could take a chance at contacting the company about what institutions they supply, as they do not manufacture consumer retail size products:
